Jamaican rum bar Jahh Tiger to open in Brisbane

Park Road in Milton is about to become home to a Jamaican rum and jerk shack.

Jahh Tiger, scheduled to open next week, is the brainchild of reggae- and rum-lover Lucy Forsyth whose bar career kicked off at the Matchbar Group in London. After moving permanently to Australia in 2006, Forsyth worked at Little Jumbo in the CBD, and the Emporium Bar, before joining Bouchon Wines & Spirits wholesaler as a spirit specialist.

"Now I'm ready to realise my dream and open my own bar," Forsyth says.

Forsyth fell under the spell of Jamaican food and culture after living in Brixton in South London, home to a large Caribbean population.

"I've always loved reggae and Bob Marley and the food and culture of Jamaica had been part of my life for a long time. Then after hiring a car and driving around Jamaica (which is not for the fainted hearted), I realised that no one in Brisbane had touched on the Jamaican side of rum bars and that's what I wanted to do."

Forsyth has taken over the former Zac's site, with a capacity of 25-30 inside and another 25 in an outdoor eating area. The menu will focus on bar snacks, as well as salt fish and salt fish fritters, supplemented by lunch specials and of course, jerk chicken. Jerk chicken is marinated in a combination of spices, herbs, honey and rum, and is said to have originated in the Jamaican town of Boston Bay. Forsyth has sourced the original marinade recipe which will be the basis of all Jahh Tiger's sauces.

She says the rum on the drinks list will be an "ode to forgotten Jamaican rums".

"We're doing a Jasper's punch on Jamaican rum and a bit of an ode to 80s disco drinks. We'll also have a signature cocktail of fresh banana with coconut and pimento dram blended with rum. The idea is to have a bit of fun and not take things too seriously."

Jahh Tiger will open on Monday, October 27.
