Something smells really good on Balaclava's Carlisle Street and it's coming from Mopho Canteen, a snappy Vietnamese diner from chef Adam Davies (ex Mr Wolf and Melbourne Wine Room).

After a reconnaissance trip to Ho Chi Minh City, Davies has curated a showcasing suite of flavour-packed dishes.

While the fitout is stripped back and casual, with stools, communal tables and an open kitchen, this isn't quick and dirty street food.

Davies' compact menu, served on handsome crockery, offers an elevated take on a clutch of Vietnamese classics with an emphasis on big, fresh, herby flavours.

There's seared tuna with green papaya, soft shell crab with sriracha mayo, and rich, slightly sweet beef pho, loaded with tender brisket.

For a group feast, there's the suckling pig and sides (two days' notice required).
