The former Royal Children's Hospital entrance has been transformed into Smith + Singleton, a restaurant that offers welcome respite from the usual clinical dining options.

Moroccan floor tiles, wrought iron and green vines soften the industrial space, and there's a variety of seating options: tables, communal high benches and intimate booths.

A red cross theme carries through from the striking logo and wooden cutlery boxes to the neon signage, a nod to doctors William Smith and John Singleton, who opened Melbourne's first free hospital for sick children in 1870.

In the open kitchen chef Lucas Sansome (Maha, St Katherine's) can be seen creating Middle Eastern, European and Asian-inspired dishes, inspired by his travels, along with those of fellow owner and chef, Paul Dunlop. who also owns GG Restaurant & Bar in East Melbourne.

Breakfast highlights include avocado, Persian feta, and hazelnut dukkah topped grilled pumpkin bread, and puffed rice granola with poached pear, orange curd, and pistachios.

The lunchtime focus is around share plates, perhaps smoked trout covered in barbecued corn and smoked almond, with beetroot mayonnaise, or parsley and lemon-crumbed lamb cutlets with whipped ricotta. Sandwiches and stone-baked pizzas are also available.

Dinner will follow once a liquor license has been approved.
