Just Open: St Hotel, St Kilda

Paul Nguyen and Simon Blacher (Saigon Sally, Hanoi Hannah) continue their mission to spread smart service and scintillating Asian food across the southside with the St Hotel, which reopened on Thursday.

Head chef Sean Judd (ex-Nahm, Chin Chin) mans the pans under a jaunty neon sign that says, "Bite me", sending out authentic, regional Thai dishes at this masterfully renovated new venue.

Bare bricks, a central atrium, an Italian glass lift and a verdant vertical garden give an airy, stylish feel to the Saint, which sports nooks for all moods and occasions – an Astroturfed al fresco terrace for Pimm's, a loungey, mid-century enclave for an evening Scotch, a breezy dining hall for a relaxed dinner with friends, even a soundproofed "social club" with booths and a dance floor for a weekend party vibe.

The pub is open daily, 11am til late.
